
For my son’s first birthday I wanted to use super, kid-friendly recipes. A friend of mine saw this awesomely creative recipe on the Fine Furious Life and said it was totally up my alley. At first glance, I have to say, I was a little grossed out, then I thought about the concept of serving yummy home cooked food in such an adorable way. Cupcakes are all the rage right now. Who would have thunk that meat and cake combo would be such a hit? Add in mashed potato frosting with some finely chopped green pepper sprinkles and you’ll have guests with be calling you Martha Stewart in no time. I inherited the most amazing secret recipe from a Portuguese friend of mine. It was a family restaurant recipe and I bugged her until she revealed the secret ingredients. Although I can’t share mine, you can use your favorite rendition of mom’s meatloaf. Then just follow the recipe for the mashed potato frosting!!

FROSTING:
7 oz box of instant mashed potatoes
Milk, as directed,
Butter, as directed
Beet juice from canned beets
Place meatloaf mixture in greased muffin tins. Put together mashed potato mixture, per instructions. All to cool. Fill potatoes in a sandwich bag. Clip the corner and decorate. Add diced green peppers for a sprinkle garnish.

I am definitely going to do this for my daycare kiddos. I will fool them until they take their first bite. HaHa. Is that mean? No I think they would like it, and it’s neat too.

My wife made these a few weeks ago for a change and they were delicious! It’s a bit of a mental gear change (and we didn’t color our mash), but we both enjoyed them.
