Halloween has come and past and the official holiday season has been kicked off. Stores have begun putting up all the best in festive decor. After black and orange and bundles of candy comes crashing down, it is only seconds until entire designs and setups are covered in ornaments and candy canes. Don’t forget to give thanks, poor Thanksgiving doesn’t get as much action. Leftover pumpkins and fall adornments come together for this prideful American tradition. Savory meals of home-style foods and desserts always are a crowd -pleaser (just not a waist-pleaser). Celebrate Turkey Day with a hearty vegetable combo, Squash Medley.


1/4lb, butter melted

1/4 c. chopped purple onion

1 butternut squash, peeled and cubed

1 buttercup squash, peeled and cubed

2-3 zucchini sliced (or yellow squash)

2-3 tomatoes quartered

2 tsp. sugar

1 tsp. salt

1.2 tsp black pepper

1/4 tsp oregano

4-5 tbsp Parmesan cheese


Start by putting big squash in the microwave for 6 minutes each to soften. Let cool and peel. Cut all remaining veggies and put into a casserole dish. Combine the butter, sugar, salt, pepper, oregano and Parmesan and pour over the veggies. Bake for 1 hour. Enjoy!
