
We all love the classics of Dr. Seuss…right? When a new opportunity to throw a gender neutral baby shower came about I new I could incorporate some of the mama-to-be’s favorite childhood classics into a fun and exciting theme. Stay tuned for more on the detail of the event. For now, enjoy the simple, easy and amazingly delicious recipe for my take on Green Eggs and Ham. My MIL is known for her fabulous egg bakes so I took her basic recipe and embellished to a flavorful rendition of this dish. The reason egg bakes are so great because you get check them off your busy to-do lists the night before any main event.
INGREDIENTS:
3 handfuls spinach
1 bundle of green onions, chopped
2 tablespoons olive oil
6 slices of bread, minus the crust
IN BOWL:
5-8 eggs, depending on size of dish
3 cups of milk
2 heaping tablespoons of pesto OR fresh chives
salt and pepper
3/4 cups diced ham
1 pkg Colby/Jack cheese
Saute the chopped green onions and spinach in a pan with olive oil under wilted, set aside. Cut the crust off the bread and line the bottom of a 9 x 13 dish. Equally sprinkle the ham and cheese over the bread slices. In a bowl, mix together the egg, pesto (or chives), milk, salt and pepper. Add the spinach and onions to the egg mixture and completely cover the pan. Cover with plastic wrap and store in refrigerator overnight. Bake at 350 degrees for nearly an hour or until slightly browned on top and sides.
FOR A GREAT KID FRIENDLY PROJECT MAKE THEM IN INDIVIDUAL MUFFIN TINS:
Separate all of the ingredients for easy handling for the kids. Make sure to spray the tins with Vegetable Oil Spray, like Pam. Put one piece of bread cut out to fit each cup, layer ingredients and cover with egg mixture before baking. Dr. Seuss would be proud.

The pesto adds a flavorful and unexpected component to the egg bake. Great for showers, brunches or a breakfast to impress your friends and family! Enjoy!
