happy hour mom snack time | dill pickle popcorn

While enjoying my Sunday night “happy hour” I stumbled upon this delicious sounding recipe courtesy of one of my favorite mommy celebs, on Tori and Dean: Home Sweet Hollywood. Think of the foods that you craved while pregnant. My favorites were milk, kiwis, popcorn, fruit tarts and pickles. I would have killed to have known this recipe during that special year. What’s not to love? A yummy craving filler that’s easy and delicious for moms on the go. After my blissful hour of “me time” on the couch I was determined to find this homemade popcorn recipe and devour it. Thankfully, Ben and Birdy had just the recipe I was after. We aren’t talking about some easy peasey microwave popcorn, you want the made-from-scratch kernels. BONUS- try it Tori’s way by adding a little splash of truffle oil for an extra decadence. You deserve to snack well!
Dill Pickle Popcorn
Makes 8 cups
Total time: 5 minutes
2 quarts popcorn (in the Whirley-Pop, this is a third of a cup of kernels popped in 1 tablespoon of vegetable oil)
2 tablespoons butter, melted
2 teaspoons vinegar
½ teaspoon garlic powder
1 heaping tablespoon finely snipped fresh dill (dried could probably work for this)
Kosher salt and black pepper
Stir together the butter, vinegar, and garlic powder, then add it to the popcorn. If it’s still in the Whirley-Pop, then you can turn the handle to mix it all up while you add the seasoning. Stir well either way, then stir in the dill and plenty of salt and black pepper. Taste for seasoning and prepare to become wildly obsessed.
